Rad Pad Thai: Detox Recipe 11 of 21May 11, 2011
Welcome to 21 Days of Detoxing! Whether you are one of our amazingly motivated participants or just interested in eating clean, whole, real food – boy do I have some recipes for you! From now ’til May 21st I’ll be featuring a delicious detox-friendly recipe each day. (And if you want to get in on the detox magic I have a Do It Yourself version available – right here.)
What’s your favorite takeout food? Pizza used to be mine back when I lived in New Jersey. Then in Boston we would get a lot of Chinese from a place that made their own tofu. That was great stuff. Now we’re in the DC area and still searching for our favorite takeout joint. For now, we do a lot of Thai food because we have so many Thai restaurants near the house.
But as with anything, you gotta wonder what the ingredients really are in those sauces! Today’s recipe brings takeout food to a much healthier place – and I bet you could whip this up in the time it takes to wait for delivery.
But before I give ya the recipe, let’s give a shout out to our detoxers who are rounding the halfway mark and doing great! Keep up the super work guys
Rad Pad Thai
1 package thin rice noodles/vermicelli (look for a brown rice noodles)
1 package firm tofu
2-3 Tbl. sesame or coconut oil
2 medium carrots, grated
2 cups red or green cabbage, grated
2/3 cup green onions, chopped
1 red pepper, diced
1 green pepper, diced
1 package fresh bean sprouts
several sprigs of fresh cilantro
2 Tbl. peanut butter
3/4 cup coconut milk
sriracha sauce/spicy red pepper pepper sauce
red curry powder
sesame or coconut oil
1) Dice tofu and lightly saute in coconut oil or sesame oil until brown
2) Prepare rice noodles according to package
3) In a small bowl combine and whisk: peanut butter, coconut milk, tamari, spicy sauce, red curry powder to taste.
4) Combine all ingredients in a large bowl and toss. Chop cilantro and add. Toss more.
Serve cold or warmed with fun salad tongs onto plates with extra sauce and spice nearby for folks to add as needed.
