Tofu Ice Cream: Detox Recipe 20 of 21

Welcome to 21 Days of Detoxing! Whether you are one of our amazingly motivated participants or just interested in eating clean, whole, real food – boy do I have some recipes for you! Ok, I don’t do a ton of soy. Because it’s confusing. It’s considered a health food on one hand, but on the other hand it’s an often genetically modified crop and there are tales of phytoestrogens and man boobs and whatnot to worry about.
Generally, I think the key is to avoid processed soy. As in, soy burgers and soy “cheese” and anything that says soy isolate protein. Same goes for any food – eat the whole food, not the parts.
Right?
This article speaks to the whole soy debate very well, in my opinion. When it comes to tofu…basically, I don’t push it as the best thing on earth, but I do include it as part of a varied diet. So, detoxers, you may not see tofu in the detox cookbook and I may not talk it up like I talk about other beans and nuts but, hey – a good source of protein that you can turn into ice cream?
I’m all for it now and then!
Tofu Ice Cream
18 ounces silken organic tofu, well chilled, divided
3 Tbl. raw honey
1/4 tsp. vanilla extract
1/8 tsp. salt
optional toppings: nuts, unsweetened cocoa powder, fresh or dried fruitCombine 12 ounces tofu, honey, vanilla and salt in a blender and puree for about 1 minute.
Transfer to a covered container and place in the freezer overnight. The next day, cut the frozen tofu into small chunks.
Puree remaining 6 ounces of tofu that is not frozen in the blender until smooth. While pureeing at high speed, add a few chunks of the frozen tofu at a time into the blender until all has been added and the mixture is smooth and thick. Serve immediately.
