So Jasmine, what’s your deal? What are you doing in the UAE?
I’m fairly new to the Health Coaching business as I am part of the Winter 2010 IIN course and we have just completed Module 19 this week. My website is under construction and I’m ready to take clients after the summer months. My husband, I and our two children, 5 and 2 live overseas in Abu Dhabi, UAE. We are teachers by profession working at an international school there. I am also a registered yoga teacher and food has been my passion since I was very young. In the last few years I’ve noticed that all I read was Diet and Healthy Lifestyle Books.
Oh I know what that’s like. For awhile there I forgot to read anything else! Sometimes there’s a point where I’m like, ok, hand me the trashy magazine, I’m getting too worked up reading about sustainable food choices and whatnot. It’s easy to go overboard. What’s your advice to folks about staying healthy and well, balanced?
I would recommend a conscious slowing down during the day with the intention of recognizing what is really important to them….to identify their authentic priorities; the people, the time, the activities, the things they love in their life and to focus on maximizing their experience with and through those things. Once you know what is truly important to you you can find joy in the most unexpected ways.
Will you share one of your recipes with us?
I can not take full credit for this recipe as it is an adapted version of the Sweet Potato Stew recipe I found in Nutrition magazine. But it is such an amazing dish. My children love it. The sweet potatoes, raisins and spices really give it a warm, wholesome, sweet taste. Great for a rainy day’s afternoon.
Sweet Potato Stew
adapted from Nutrition magazine
3 Tbl. extra virgin olive oil
2 cups onion, chopped
3 cloves garlic, minced
3/4 cup low-sodium vegetable stock
1/2 tsp turmeric
1 tsp cinnamon
3/4 tsp curry powder
1/4 tsp cumin
1/4 tsp ground nutmeg
1/4 tsp garam masala
3/4 tsp sea salt
3/4 tsp freshly ground black pepper
4 sweet potatoes, peeled and cut into 2-inch cubes
1 large red bell pepper, seeds and ribs removed, coarsely chopped
1 purple eggplant, cubed
2 chicken breast, cooked and cut into 1-inch cubes
2 cups canned chickpeas, rinsed and drained
3 cups canned, diced plum tomatoes
3/4 cup raisins
fresh cilantro leaves for garnish
Heat olive oil in large saucepan.place onions and garlic in heated oil and cook covered until translucent, about 8 minutes. Add a little vegetable stock to keep vegetables from sticking. Stir in all spices. Continue cooking for 3 minutes. Add all vegetables and bring to a boil. Reduce heat to a simmer and cook for 5 more minutes. Add chickpeas, tomatoes and raisins. Simmer until sweet potatoes are tender. Ladle into bowls and garnish with chopped cilantro before serving.
What’s been your most exciting client success story?
My only client thus far has been myself and I have to admit that is has been a very exciting ride. I’ve overcome anxiety, fatigue, tiredness and my tendency toward low moods through changes in my diet and some natural supplements. I’d have to say that now, most every day is a good day. I have more energy. I feel more vital. My zest for life has returned and I’m so ready to continue taking on new challenges and journeying in the direction of growth.
What’s the next important health topic you’d like to tackle and help people with?
I believe that half the world must be addicted to sugar. I’d really like to bring this catastrophe in people’s lives to light and give them tools to tackle their unknown addiction.
