Meals like this are sometimes called “Garbage Plates” or “Garbage Salads.” It makes me cringe though – I just can’t call organic veggies and grass-fed steak “garbage.”
Maybe a Kitchen Sink Salad? Even that sounds like it should go down the disposal.
Nah, let’s just call this an un-recipe. A formula for making the most out of the food in your fridge and getting dinner on the table fast.
Quick Dinner UnRecipe
1. Start with a bed of greens, either raw or cooked.
2. Top with more veggies.
3. Add cooked brown rice or other whole grain (optional).
4. Add a protein – meat, fish, tofu, beans, nuts, or a combination.
5. Dress with condiments like pesto, salad dressing, sesame seeds, whatever.
Does that help at all, during this busy time of year? I officially started Christmas shopping yesterday but we have not put up the tree. I do have a wreath hook on the door – but no wreath. Baby steps.
Speaking of baby steps, Danny isn’t walking but the kid can’t stop pulling himself up to stand against whatever is within reach. I’m sorta terrified what is going to happen with the tree when we finally get it up! But I got a great idea from another mom I just have to share:
After you put up the tree, fill some fairly large boxes with books. Wrap them with thick, shiny paper that is somewhat drool-proof and arrange them around the tree as a decorative baby barrier.
Or I guess you could just hang the tree from the ceiling?
