Love cookies. Love breakfasts that are easy to grab. All in all, I think we have a real winner here folks!

Today’s recipe comes from my friend Jennifer at healthcoachandcook.com. Thank you Jennifer, from the bottom of our detoxing hearts.

Breakfast cookies
Yields 12-15 cookies
1 1/2 cups rolled oats
1/2 cup coconut flakes
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup of quinoa flakes
1/2 cup walnuts, chopped
3/4 cup raisins or other dried fruit
*optional (1/4 cup of hemp seeds, you could add sunflower seeds, chia seeds)
3 ripe bananas, mashed
1/4 cup melted coconut oil
1 teaspoon vanilla extract

Preheat oven to 350F. Line baking sheet with parchment paper.

In a large bowl, combine oats, quinoa flakes, nuts, coconut flakes and seeds if using. Stir in cinnamon. Add dried fruit and stir until well and evenly mixed. Make sure the dried fruit does not stick together in big batches.

In another bowl, combine coconut oil, mashed banana and vanilla extract.

Pour wet ingredients over dry ingredients and stir until well combined.

Using your hands form into cookies. Batch makes about 12-15 depending on size. Bake for about 20 minutes or until edges are golden brown.

    On our detox forum we’ve been speculating that perhaps oats could replace the quinoa flakes (if they’re hard to find). But I’m pretty sure quinoa flakes are available at Whole Foods.

    I love cookies however I can get them and being able to eat them for breakfast sans guilt sounds good to me!
