Breakfast scramble (Egg free, dairy free, soy free): Detox recipe 1 of 21April 23, 2012

Welcome to Day 1! Let’s start off on the right foot – and that means a healthy breakfast. There’s no way you can grab a muffin or eat a bowl of cereal and feel your best. So we’re gonna lose all those processed, sugar-laden morning options and go for something filling, nourishing and delicious.
Some of us will do great with a big bowl of oats. Or a banana.
But some of us (ahem…) might want more protein. Something a bit more filling.
You may have heard of tofu scrambles, and those are an ok way to go. (I’m not a huge fan of soy. If you are, please buy organic.) But the idea of a scramble that kind of feels like eggs? It’s fab.
This recipe provides loads of protein and versatility. Use whatever veggies you like, whatever you have on hand. I like mushrooms for their “meaty” texture and flavor. Nutritional yeast adds a savory touch, almost like cheese. Try it.
Easy Egg-free, Dairy-Free, Soy-Free Breakfast Scramble
2 Tbl. olive oil
3 cloves garlic, minced
1 onion, chopped
8 oz. sliced mushrooms
2-3 cups cooked white beans
1/2 tsp. turmeric
1/4 tsp. crushed red pepper
1 large tomato, chopped
1 handful fresh basil, chopped
salt & pepper, to taste
Nutritional yeast to sprinkle on top
Heat oil over medium-low heat in a large skillet. Add garlic and cook until just golden. Add onions, cook until translucent. Add mushrooms, cook until softened.
Add beans. Using a fork, mash about 50% of the beans. Leave the rest intact. (This is for appearance only, you can skip the mashing if you like.) Stir in turmeric, red pepper, tomato and basil. Salt and pepper to taste. Serve with a sprinkle of nutritional yeast on top.
Feeding friends or family? No need for a separate meal. Let them add bacon, cheese, etc. to their scramble.
