Taco Night! (Meat free, dairy free, icky taco seasoning mix free): Detox recipe 2 of 21April 24, 2012

Ready to have your mind blown? Families around the country are sitting down to taco night (a favorite, yes?) and this is what they are eating:
Maltodextrin, salt, chili pepper, onion powder, spice, monosodium glutamate (MSG), corn starch, yellow corn flour, partially hydrogenated soybean oil, silicon dioxide (anticaking agent), natural flavor, ethoxyquin (preservative).
How nasty is that? And such a shame because taco night can be really healthy and delicious. The photo above shows just one way to serve it up – with ground beef, sweet potatoes, beans, avocado and swiss chard.
Now our detoxers won’t be eating meat, but if there are a variety of options to choose from the whole family will be happy. Let’s start by giving our protein some seasoning that isn’t full of garbage. Ready? It’s easy:
Detox friendly homemade taco filling
The recipe also works for 1 lb. of ground beef or tofu instead of beans.
2 Tbl. olive oil
1 can black or pinto beans
1/2 onion, chopped
3 cloves garlic, chopped
1 tsp. chili powder
1/2 tsp. dried oregano
1 tsp. cumin
1/2 tsp. coriander
1/2 tsp. salt
Heat olive oil in large skillet over medium heat. Add onions, cook until translucent. Add garlic, cook until lightly golden. Add beans, stir well. Mix in other seasonings until evenly distributed.
So, how will you serve your tacos? In shells? As a salad? Some detox-friendly suggestions:
- Instead of the usual lettuce, try chopped spinach or swiss chard.
- Instead of sour cream, try the creaminess of plain avocado or guacamole.
- Instead of cheese, shred carrots on top.
- Add vegetables like sweet potatoes, asparagus or broccoli.
- Top with a high quality, delicious salsa
- Serve with organic corn tortillas, preferably soft (they’re not fried in cheap oil)
