Cherry Coconut Brownie Parfait Recipe (Gluten free, dairy free, processed sugar free)August 8, 2012
There was so much interest when I posted this dessert photo to my Facebook fan page the other day, I thought it deserved a proper blog post. Because we like dessert. Right? Right.
You know what else I love? Dexter. We are a season behind so shhhhhh don’t give anything away! In the evenings when the babe’s in bed, we ignore our newly moved living room full of overflowing boxes and have some much needed downtime with Dexter and (sometimes) dessert.
These parfaits are made with food. Real food. Certainly a treat, but not one that’s gonna rock your blood sugar into next week. So save room at dinner – packed with healthy fats and fiber, these are not wussy desserts!
Cherry Coconut Brownie Parfait
I got the idea for the brownies from Modern Alternative Mama – it was my first time baking with almond flour and I was very happy with the results! Do yourself a favor and buy almond flour at Trader Joe’s for 1/4 the price of Bob Red Mill’s at Whole Foods.
8 oz. frozen organic cherries
8 oz. frozen bananas, peeled and chopped
~1 cup coconut milk (the thick stuff that comes in a can)
1/2 cup coconut oil, melted
3/4 cup Sucanat
1/2 tsp. vanilla
1/4 cup cocoa powder
1/2 tsp. salt
1/2 tsp. baking soda
1 1/4 cup almond flour
Optional fillings: fresh chopped cherries, unsweetened shredded coconut, nuts, etc. (I used a couple chocolate chips, which of course added some processed sugar and dairy. Shhh don’t tell!)
First, get the brownies going. Heat oven to 350F. Combine Sucanat, eggs and vanilla in a large bowl. Slowly add coconut oil, mixing as you go. Add the salt, baking soda, cocoa and almond flour, mixing until you get a smooth batter. (I found a fork to work better than a spoon.) Pour into an 9×10 greased baking dish and bake for 25 minutes.
While the brownies bake, place frozen fruit in food processor. It helps if you allow it to soften for a few minutes. Then pour in half of the coconut milk and blend, adding more coconut milk as you go. It will turn into ice cream consistency and you can use a spatula to spoon it out.
To assemble parfaits: In a glass, layer squares of brownie, then optional fillings, then blended fruit. Repeat layers until glass is full.
