This kind of thing blows my mind.

I’ve only recently begun to embrace the world of gluten-free foods. It scared the bejeezus out of me for years because I thought it meant having to use 47 different kinds of flours and perform some sort of recipe reiki magic.

(That’s not my style. I’m a throw-it-together kind of gal on most days.)

But what I’ve found is that there are lots of simple gluten-free recipes. Those are the ones I like to bring to you guys! After all, wheat is cruel to your blood sugar. And mine. It might even be causing your eczema. We drop it during our detox to allow the body to live without hindrance. Amazing things happen every time! This fall’s group is testament – what an awesome group. I’m so proud of them for completing Week 1.

Apple Cinnamon Grain Free Waffles
2 apples
1 banana
3 eggs
1 1/2 cups almond butter
1 1/2 TBl. arrowroot powder
1 Tbl. Cinnamon
1 tsp. nutmeg

Take out your food processor and plug in a waffle iron to preheat. Peel and chop the apples and place in a large bowl. Chuck in a banana and almond butter. Blend until smooth. Add eggs and spices and arrowroot powder, combine until completely blended.

Cook on your waffle iron, I found that 4 minutes was just right for getting the waffles cooked through without over cooking them

These can be made as pancakes too. You might need to add just a couple of tablespoons of water if the waffle batter is too thick.

    You’re welcome Rebecca! How would you describe how you feel without wheat? I’m curious what symptoms different people experience relief from.

    What is the measurement for the arrowroot powder? 2tablespoons?

    It is 1.5 tablespoons
