Halloween Caramel Apple NachosOctober 30, 2012
I’m writing this post pre-Frankenstorm, unsure whether or not we will have power next week or if we’ll be able to celebrate Halloween. I may not be a fan of candy, but I sure do love seeing little kids all dressed up!
Our neighbors hosted an early costume party last week so Danny got to wear his costume at least once. However if you recall, I was in the midst of my 21 Day Detox. It made me stop in my tracks and think really hard about what I could bring to eat and share.
That’s one of the best parts of doing a detox. It makes you think, re-evaluate your habits, y’know?
First I tried a pumpkin pie version of these gummy candies. They were…meh.
At this point I started thinking Oh just buy a bag of pretzels at Trader Joe’s, screw it. But I’m grateful to my college roommate (who is now a mother of 4!) for suggesting I google Apple Nachos.
And aside from a humble dose of chocolate, I created a plate that actually fit the detox requirements! All real, whole food. Totally delicious. People gobbled ‘em up and asked for the recipe, so here it is:
Caramel Apple Nachos
6 apples/pears, thinly sliced
Juice of 1 lemon
1 cup natural peanut butter
1 cup coconut oil, melted
1/2 cup pure maple syrup
2 Tbl vanilla
1/2 tsp. salt
1 cup pecans, toasted and chopped
3/4 cup unsweetened coconut flakes
6 oz dark chocolate chips
Rub lemon juice onto exposed flesh of apples and pears. This keeps them from turning brown.
Combine PB, oil, maple syrup, vanilla and salt to make sauce.
Layer on a plate: fruit, sauce, nuts, coconut, sprinkle of cinnamon, chocolate. Repeat with a second layer and keep going until plate is full.
Take THAT, Halloween!
