Every day on the way home from preschool I ask my 2 1/2 year old son, “What did you have for lunch today?”
And every day he tells me, “Bwwwwwead. Ket. Chup.”
At 2 1/2, he already knows how to push my buttons. Because even though I pay through the nose for him to attend a nature-based learning center with organic meals…he’s right. They serve quite a bit of bread. And apparently ketchup. And in my opinion, not nearly enough protein. While it’s way, way better than any preschool or daycare menu I’ve looked at…it’s still a recipe for a blood sugar rollercoaster.
And the thing is, he loves bread. I love bread. You probably do too. Who doesn’t?? Yet bread provides us with very little, nutritionally speaking. Even whole wheat bread. And it can cause all sorts of issues in the body – from blood sugar spikes and gradual insulin resistance to inflammation to digestive distress. Through the years I’ve transitioned to eating less and less of it.
But man. Sometimes I want bwwwwwead for lunch, too.
Enter stage right, my new super easy solution to bread cravings! These are so, so easy to make and they hit the spot. How can almonds and eggs taste like bread? I’ll be damned if I know, but it works really well. I’m calling them “biscuits” because they look like muffins but are not sweet. Sliced in half, they are almost like a little sandwich roll.
Goodbye, lame carbs. Hello, protein.
Super Easy, Grain-free Biscuits
Adapted from this recipe. Makes 6
Prep time: 5 minutes
Cook time: 15-20 minutes
1 cup almond flour or almond meal (Trader Joe’s has it for cheap)
1/2 cup flax meal
1 tsp. salt
2 tsp. baking powder
2 Tbl. olive oil (I recommend this brand)
1/4 cup sesame seeds
Preheat oven to 350F. Whisk together all ingredients except sesame seeds. Oil muffin tin and fill each cup 3/4 full with batter. Sprinkle the tops with sesame seeds. Bake 15-20 minutes or until tops are browned.
