Throughout our 21 days, I’ve tried to encourage the group to focus on the positive. In their lives, in their food choices, whatever. Just choosing positivity is the point.

It detoxes us from negative thoughts, and that’s HUGE.

Of course, this all comes during some of the most insane days of my life. Seriously! In the past 21 days I’ve dealt with sleepless nights, a baby who can’t and then won’t eat, my milk drying up, my milk coming back, trips to multiple doctors, therapists and lactation consultants, fussy spells that test my sanity, having to call my mom from out of town to come help me survive it all, and the inevitable marital discord that a new baby can create.

Stay positive???

Yes. That’s what I’m trying to say. Despite whatever shit is going down in your life, how can you frame it in a positive way? This is important work. This has been my work. You can eat kale and quinoa all day, but if your mind is constantly repeating the negative you are simply never going to feel your best.

Today’s recipe…well it may be the most important one yet.

Ok, I don’t do a ton of soy. Because it’s confusing. It’s considered a health food on one hand, but on the other hand it’s an often genetically modified crop and there are tales of phytoestrogens and man boobs and whatnot to worry about.

Decadence and detoxing don’t usually go hand in hand. As wonderful as swiss chard leaves are, they don’t make you feel all velvety and Chanel No. 5.

I know this.

But I’d argue that if you want to feel velvety and Chanel No. 5 you should wear velvet and spray some perfume and leave food out of it. However. I appreciate a sensory experience on my plate like anyone else, which is why I adore the recipe I’m sharing today. Forget deprivation! With a little imagination, clean food can be luxurious.

Portobello Mushroom, Cashew Cheese and Sundried Tomato Sandwich with Fresh Basil
2 Portobello mushrooms
1 oz cashew cheese
3 un-sulphured sun dried tomatoes
2 leaves fresh basil
Good quality balsamic vinegar for drizzling
Salt, pepper and garlic powder, to taste
Handful of fresh lettuce
Olive oil spray

1. Preheat grill to medium high heat; spray both sides of portobello with oil, season with salt, pepper and garlic powder. Grill about six minutes per side.

2. Meanwhile, soak sun dried tomatoes as mushrooms cook, about 12 minutes. Remove from water and chop.

3. Lay grilled portobellos on a plate with top sides down. Drizzle with balsamic. Layer one side with goat cheese, sun dried tomatoes, basil and lettuce. Top with other Portobello. Enjoy with a fresh salad.

Let’s talk about why I don’t like Trader Joe’s.

For some reason, everyone thinks they sell healthy food. Newsflash – they don’t. Not really. Try finding one of their boxed or canned products without added sugars or refined grains. Half the dried fruit has sulfites or sugar or something gross added. Very little is organic. They don’t sell a peanut butter that isn’t homogenized. They sell a lot of soy-based packaged food.The grass fed beef leaves something to be desired.

Ok, now let’s talk about why I LOVE Trader Joe’s.

Whether you have a garden or CSA, you may be inundated with greens right now. Awesome! But you gotta use it before it goes bad.

Pesto to the rescue!

Ok, maybe you don’t have a CSA or a garden…that’s ok. I wish I had a garden. Wait, I wish I knew how to garden. And our CSA doesn’t start for another couple of weeks.

Doesn’t matter. You and I can still make pesto from whatever looks good at Whole Foods. They didn’t have any arugula this week, or watercress (WTF, WF?) so I got lots of chard. Whatever, getting your dark, leafy greens daily is a super important part of a healthy diet and as long as you rotate what kind you’re eating you’ll be in great shape. For this recipe, you can really use any type of greens you like!

I first heard of daikon when I saw Haruki Murakami speak at MIT. Have you read any Murakami? Crazy stuff. Anyway, he talked about carrying a daikon home from the market and how it was so big it stuck out the top of the bag. Random, I know.

The next time I heard of daikon was in a macrobiotic cookbook. Macrobiotics is just one of the dietary theories that I studied at the Institute for Integrative Nutrition, and while I don’t subscribe to it 100%, they sure have some cool ideas. As for daikon, it’s known to aid digestion and help clean the body and is used quite a bit with macrobiotics. Really, it’s just a type of radish. So don’t be afraid!

Maybe Murakami was making something like this dish the night he carried home his daikon?

With baby still safely tucked away in my belly, I flew to Chicago to visit some girl friends last year. Oh my…will I ever do that again?!

While we were there, my friend Laura whipped up some delicious apples for dessert. And while these are truly *borderline* detox friendly I want to share them with you because everyone needs a special treat sometimes. The syrup and honey are a TAD more than I’d be using at this point in the detox, but, hey. There’s my disclaimer. They’re damn good. You could try with a reduced amount of sweeteners or save this recipe until after the detox, or heck, just go ahead and make these if your blood sugar feels stable. Eat these after you had a protein rich meal, ok? That’s key to keeping your blood sugar in check.

I hear all my detoxers jumping up and down with joy! Enjoy, guys. You deserve it as you start off Week 3…

One time when my husband and I were on a vegan kick we hosted a family dinner. This is the kind of family who expected a turkey on the table. Um…

So I made a loaf like this – something to be the centerpiece of the meal! I can’t say they totally understood what quinoa was, and I think they still wondered when the turkey was coming out, but everyone ate it. I consider that a victory!

Sometimes people miss having a hunka hunka burnin’ meat on their plate. Vegetarian entrees tend to be more free-form, less structured items. But here’s a solution to try: Chickpea Patties. (Although if you’re like me you’ll just make ‘em Sloppy Joe style…) I’d try these with a smear of tahini on top, or any salad dressing of choice, over brown rice or salad greens. Or maybe between two slices of millet bread, if you want to go the sandwich route.
