Spring 2011 detox recipes
Welcome to 21 Days of Detoxing! Whether you are one of our amazingly motivated participants or just interested in eating clean, whole, real food – boy do I have some recipes for you! From now ’til May 21st I’ll be featuring a delicious detox-friendly recipe each day. (And if you want to get in on the detox magic I have a Do It Yourself version available – right here.)
What’s your favorite takeout food? Pizza used to be mine back when I lived in New Jersey. Then in Boston we would get a lot of Chinese from a place that made their own tofu. That was great stuff. Now we’re in the DC area and still searching for our favorite takeout joint. For now, we do a lot of Thai food because we have so many Thai restaurants near the house.
But as with anything, you gotta wonder what the ingredients really are in those sauces! Today’s recipe brings takeout food to a much healthier place – and I bet you could whip this up in the time it takes to wait for delivery.
But before I give ya the recipe, let’s give a shout out to our detoxers who are rounding the halfway mark and doing great! Keep up the super work guys

Every time I run this detox I hear the same thing – THANK GOD FOR BANANA ICE CREAM! Yeah, man. It’s that good. When you’re not eating processed sugar you really start to appreciate the incredible sweet/creamy properties of the everyday banana.
But hold on there! We’ve got something even better today. One of our detox participants has her own spin on banana ice cream and I think it’s brilliant. Just because you’re eating clean doesn’t mean you don’t get dessert…it just means your dessert is real food too and you’re going to feel good tomorrow.
Killer.

Superfoods kind of piss me off. I think…well, sure they’re nutritionally dense and all. But so is a carrot. So is kale. Or almonds.
Eating real food is the point. Superfoods…well I tend to think they’re unnecessary (and pricey!) but that’s just me, ok? Go on with your bad goji berry self, if you like ‘em!
Today’s detox recipe makes excellent use of chia seeds for their pudding-making properties, aside from super nutritional benefits. That’s pretty great. I bet you could make this one with like, raisins and pumpkin seeds if you wanted to save a few bucks. Just sayin’. It’s gonna be delicious any way you do it!
Hiker’s Hemp Chia Dream Pudding
1 small container of unflavored coconut water (like single serve Zico)
1/4 cup goji berries
1/4 – 1/2 cup chia seeds
1/4 cup hulled hemp seeds
chopped up fruit or nuts of choice
cinnamon to taste
raw cacao powder or raw cacao nibs to taste
Throw everything in a bowl… mix it up and let it sit for 25 min or so. Or make it the night before and let it sit in the fridge.

Eventually, it’s gonna happen. You’re eating really well, really clean. You’re on a roll.
And then.
The dreaded dinner party. Or a holiday. Hello, Mother’s Day???
What to make – what to bring? Oy. There’s got to be a way to eat elegantly and healthily at the same time, right?
Enter today’s recipe. And while asparagus doesn’t count as a dark, leafy green, it is lovely and in season right now so you should be able to get a nice bunch at any grocery store.
Andalusian Asparagus
An elegant way to serve your asparagus that’s as tasty as it is visually impressive.
About 1 pound fresh asparagus spears, washed and trimmed
1 large or 2 small slices rustic bread, cut into large cubes
(Make sure to use millet, brown rice or quinoa bread to make this detox-friendly)
3 Tbl extra virgin olive oil, preferably organic

By day 7 of detoxing there’s usually mixed feelings in the group. Some folks are happy as a clam with their new regimen, others are still struggling out of their sugar/caffeine withdrawal – but I know from experience that another 7 days from now everyone is going to be in an even better place.
As I say over and over, our bodies are how they are after YEARS of eating and living a certain way. And change doesn’t happen overnight. But it DOES happen.
So hang in there, with whatever healthy choices you’re making in your life.
And now, for some inspirational tacos!

Homemade is always best, but that doesn’t mean there aren’t some fabulous packaged foods to help you out in the kitchen! I use Better Than Bouillon if I need a quick broth, for instance. And in this recipe, a pre-made curry paste makes life way easier. Just be sure to carefully read labels to avoid hidden sugars and weird chemical ingredients.
Our detox group is almost done with Week 1…give ‘em a round of applause!

Eating healthy meals is one thing. I mean, if you’re gonna cook it’s only a little more effort to do something healthy. But eating healthy snacks? I think that can be tough. After all, the definition of a snack is like, a quick fix on the go, right?
Try finding a snack that’s real, clean, whole food at the movies. Or at the airport. Or at your inlaws’ house. Um…that’s a task. It’s much easier to make your own and carry ‘em with you or keep ‘em out on the counter and within easy reach for whenever you get the munchies. That’s what I like to do. Otherwise my hand somehow finds it’s way into a bag of Oreos. I don’t know how that happens!
Final tips? Double – no, triple the recipe. And feel free to add a teaspoon of cinnamon or bit of vanilla extract. For a more savory snack you could add cumin or cayenne. Possibilities, my dears, they go on and on.

When I asked my friends for some great detox-friendly recipes I knew I get a bunch of quinoa dishes. See, health nuts love quinoa. We also like flaunting how we know how to pronounce it (Keen-wah). But regular people like it too, that’s the good news! Wondering if your toddler will eat this stuff? I bet she will. What about your brother, husband or father? Yup, just tell them it’s like rice.
And it is. Like rice, I mean. Except more nutritionally dense, with a significant amount of protein. Now you can buy it in boxes at the grocery store, but it’s much cheaper in bulk bins at Whole Foods or your local natural food store. Cook it, sprout it, or just look at it – quinoa’s pretty neat.

Now we’re gettin’ crazy. That’s right. Mochi is like, the 7th level of Whole Foods Heaven. No not the Mochi ice cream treats at Trader Joes, I don’t know why they call it that. Real mochi is made from brown rice! But don’t be scared. This stuff is really interesting, easy and inexpensive. (Find it in the refrigerator case, btw.)
Baked Mochi Stuffed with Cashew Cheese and Tomatoes
Serves 4-6
1 Package of Mochi
1 cup of cashews
1 small/medium clove of garlic
1 Tbl. lemon juice
1/2 tsp salt
1/4 cup water
10 cherry tomatoes
Tamari
Preheat oven to 450.
1. Cut mochi into 1″ squares and bake for 8-10 minutes.
2. In the meantime, make the cashew cheese by combining the cashews, garlic and salt in a food processor and puree until coarsely ground. Add the water and lemon juice and puree again until mixed well. This should be the texture of ricotta cheese.
2. Slice cherry tomatoes in half.
3. When mochi is done baking, allow to cool enough to touch and then take a paring knife and make a small slice in the middle to create an opening for the stuffing.
4. Spoon in about 1tsp of cashew cheese and drizzle inside with a little tamari. Add the tomato and serve. These are best if served immediately but can sit for up to a half hour.

I cannot stress enough the value of a good sauce! Think about it. A bowl of brown rice is pretty dull. You can add veggies ’till you’re blue in the face and it’s still kinda dull.
Well, that stinks Michelle. You promised that clean, whole food could be tasty.
Hang on, Buster! I’m getting to it. See here’s why you need a dressing or sauce that knocks your socks off. It turns dull to delicious! This recipe is perfect to have on hand for your rice bowls, your quinoa pasta, your veggie platters, whatev. Make a batch and keep it in the fridge – and I dare say you could save yourself some time by buying roasted red peppers instead of roasting yourself, but hey, homemade is always best.
