Easy ‘n’ Frugal: Pasta with tuna and olives

tunapasta Easy n Frugal: Pasta with tuna and olives

Oh, internet full of recipes, I love you so. But gone are the days of experimenting with teff flour and Indian inspired recipes…I’m sorry but I don’t have time right now to prep grocery lists and hunt down new ingredients.

And while we DID finally sell our condo back in Massachusetts, I don’t have the extra green to spend on an assortment of oils and seasonings and kitchen equipment I’ll only use once. Oh, that mandoline that sits and sits…I never quite got the hang of it and the knife works just fine…

Mango Green Smoothie: Detox recipe 18 of 21

3 Mango Green Smoothie: Detox recipe 18 of 21

Welcome to 21 Days of Detoxing! Whether you are one of our amazingly motivated participants or just interested in eating clean, whole, real food – boy do I have some recipes for you! From now ’til May 21st I’ll be featuring a delicious detox-friendly recipe each day. (And if you want to get in on the detox magic I have a Do It Yourself version available – right here.)

Let’s talk about why I don’t like Trader Joe’s.

For some reason, everyone thinks they sell healthy food. Newsflash – they don’t. Not really. Try finding one of their boxed or canned products without added sugars or refined grains. Half the dried fruit has sulfites or sugar or something gross added. Very little is organic. They don’t sell a peanut butter that isn’t homogenized. They sell a lot of soy-based packaged food. The grass fed beef leaves something to be desired.

Ok, now let’s talk about why I LOVE Trader Joe’s.

Lotsa chili with cornbread because “Leftovers” is my middle name

chili Lotsa chili with cornbread because Leftovers is my middle name

Nighttimes are a bit of a race lately. My husband gets home, we try to eat dinner and catch up, spend some quality time with Danny in between feedings and put him to bed all in like…90 minutes.

The best solution so far is for me to cook during the day and put the finishing touch on at 6pm. But time dinner that precisely? Who do I look like, June Cleaver?

Well, there’s only one hope and it’s my slow cooker. I gotta learn how to use this thing for more than just making stock. Thing is, I don’t like most slow cooker recipes I’ve seen and I don’t really know how to convert a regular recipe into a slow cooked recipe.

What do they say about the mother of invention?

A good egg. The best I’ve seen, as a matter of fact.

eggs A good egg. The best Ive seen, as a matter of fact.

My husband would tell you that worry too much. I overreact. I’m a bit of a perfectionist.

He’s right.

I dunno, that’s just how I am. But I’ll admit that sometimes it gets me nowhere. I plan to buy chia seeds because I’ve read how healthy they are. Do I really need another bag of seeds or nuts in the house? Yes. Because these are SO good for me and I’m sure the omega-3′s are good for baby Danny. I wait and wait to finally make a trip to the store that sells ‘em. I consider ordering online, weighing the pros and cons of paying shipping. Etcetera. I finally get them. A whole bag! On sale!

I break out in hives from the chia seeds.

See? All the research and commitment in the world can just turn around on you.

Sometimes my husband is right about chilling out.

Now if you’ve been following my blog for awhile and remember me eating and enjoying chia seeds in the past, you’re right! They were organic, and a different brand. This recipe quickly became a favorite of my 21 Day Detox participants (there’s still time to join us this spring, btw!)

Take the overwhelm out of the kitchen and the best pork chops I’ve ever had

porkdinner Take the overwhelm out of the kitchen and the best pork chops Ive ever had

Recently I joined a local buying club for grassfed beef, pastured chickens, eggs and the like. Food comes fresh from a nearby farm each week and we pick up our orders at a member’s house. How cool is that? Here I am, a stone’s throw from a major city yet able to source food from a sustainable farm.

Excellent.

I suggest you look into something similar in your area. Just start talking to people, asking questions, and meeting more like minded folks. The secret of farm fresh food will reveal itself. And if that doesn’t work, check out localharvest.org or realmilk.com to see what they’ve got for ya.

This week I got bacon, ground beef, 2 dozen eggs and pork chops.

My mom used to bake breaded pork chops with Italian style breadcrumbs from the grocery store. They were always soggy. To be honest, I didn’t know what on earth I was going to do with mine, but I’ll be damned if I let such fine pork result in sogginess! I tapped into one of my favorite cookbooks for an idea. Voila! A few tweaks and I had my very own super crunchy, delicious pork chops. The secret? Homemade breadcrumbs.

Dude, I don’t care if you’re making pork or fish or tofu or zucchini. Bread it with this. You’ll thank me.

Southern Style Cobb Salad

southernsalad Southern Style Cobb Salad

Disclaimer: it isn’t really a cobb salad. I just looked at my husband while we were eating this delicious meal and asked, “What would you call it?”

To be honest I have no idea where this recipe came from. Wait, yes I do! I was trying to create a protein-rich meal on the cheap. I wanted it to include animal protein, but not at the cost of a grass-fed steak or anything like that.

No, this wasn’t our weekend Valentine’s Dinner. (Note obligatory Valentines reference.) Though I got a little creative with the plating as if I were serving something fancy!

Have I mentioned how expensive groceries are in D.C.? Seriously. We lived in Boston, not Kansas. I did not expect the prices to go up as we moved south. Everything is more expensive here, even parking meters. My penny-pinching grocery moves have definitely come in handy.

Feeling like fighting back

fightback Feeling like fighting back

I’m 41 weeks pregnant tomorrow. A natural birth means I will not be induced nor will I have a C-section just because I’m a bit past my due date. This makes me weird in the pregnancy world, where most women by now would be facing medical intervention in the form of surgery or drugs. But babies have been born at 42 weeks, 43 weeks, whatever, for a gabillion years. No need to rush. Yet still…I admit…I might punch someone. I think this is the appropriate way to feel at 41 weeks pregnant. Ha!

In the meantime, I thought I’d direct my punching to 3 newsworthy items from this past week. They all fit in well with Food Renegade’s Fight Back Friday, which I haven’t participated in for awhile. But today…yeah, I’ll Fight Back!

Earlier this week, I wrote a post about food allergies. My main questions: What is causing the rate of food allergies to rise so drastically? And what can we do to reverse the trend?

Must there be something in the water?

sparklingwater Must there be something in the water?

Awareness. That’s it. If you want to summarize what healthy eating and healthy living is all about, it’s about taking responsibility for knowing what the heck is going on. All of my programs are based on this premise.

I figure, once you really know what you’re eating, where it comes from, and how it makes your body feel, you’re going to start making better choices for your body. Note that this is a lot different than eating whatever is advertised as healthy.

This means, you have to do your homework.

Well, I’ll be honest. I got a big fat F last week on my homework last week.

pizza Eating well despite the crazies

Christmas is, what, 12 days away? Whatever, man. All I want for Christmas is to not trip over boxes in my living room! We pretty much spent the weekend trying to accomplish just that.

What’s on your holiday wish list?

Aside from a clean house, I’d like my baby to keep being a good boy in there, kicking and healthy (ooh! he just gave me one as I wrote that!) and I’d like a pair of slippers that don’t fall off my feet when I walk down the stairs. Oh, and pretty, pretty please someone buy our condo back in Massachusetts? I know, I know, you were thinking you wanted a pair of slippers too, but don’t you really want a lovely 3 bedroom condo?
