If you’re like me, healthy eating often goes down the tubes when you are confronted with a snacking situation. Lately I’ve been eating lunch around 3pm when my son is napping. That means at around 2pm I’m hunting around for something to tide me over.

I’m grateful to this detox for keeping me accountable during these snacky hours of the day! Instead of cookies or crackers I’m going for things like brown rice cakes, fruit, veggie sticks – and roasted chickpeas. Oh yes.

I’ve wanted to try roasted chickpeas for like…years now. When I finally made them a few weeks ago I was disappointed. They were really bland and dry! Hmmm.

Tried another recipe and had similar results.

Finally I found a recipe for salt and vinegar chickpeas and it hit me – these puppies need some serious flavor to come alive! Here is my rendition, which are a little easier than the original and I’ve added even more flavor. I loved them so much I scarfed ‘em down immediately. Maybe double your batch.

Cold salad. Warm dressing. There, I’ve said it! It’s the secret to amazing meal-sized salads!

Well, at least this salad.

Which I came up with when I had cumin seeds on the brain. Somehow they’d worked their way to the front of my herb shelf, which is strange because I never use them. Staring at me every time I opened the pantry door, they inspired quietly over time until my brain sorted out what to do with them.

As my detoxers know, I believe in the power of a great dressing. Here’s one that doesn’t even require a blender.

Congratulations to all of my detoxers on completing Week 1! To celebrate, I highly recommend this pudding for dessert. Or, really, for breakfast if you want. It’s that good for you.

I bet a lot of you have childhood memories of chocolate pudding. Not so much here (though Jello Pudding Pops were a favorite, now that I think about it.) Anyway, my love affair with chocolate pudding really took hold during my pregnancy. Funny, how those cravings come out of nowhere. If only I’d had this recipe back then!

Honestly, I get sick and tired of quinoa this, quinoa that. The darling of the health food world! A complete protein. Light and fluffy. Easy to cook. Easy to sprout! And you know you’ve earned your Crunchy badge of honor when you can pronounce it without wincing.

Admittedly, it is pretty great. I used to eat it constantly, even just plain with some olive oil and salt. I guess I got a little bored and distracted when my local Whole Foods revamped their bulk bin aisle to sell about a million other grains. (Bhutanese red rice, anyone?)

But a recipe like this…Wowza! It’s enough to get me back in the quinoa game for sure.

Today’s recipe comes from my dear friend Sara at dstreetwellness.com. She’s pretty much hooked us up for tonight’s easy detox-friendly dinner.

This is a quick and easy dish with minimal prep – the secret is using frozen vegetables to add color and minimize prep work, plus you can change up the taste of it by picking different combos of frozen veggies each time. (Recently at the store I was psyched to see frozen mushrooms, artichoke hearts and chopped kale!) The rice can be pre-made – another trick for keeping meals quick and easy. The full fat coconut milk makes this dish rich and satisfying.

Know what’s super cool? This is a one pot meal that takes about 15 minutes to make.

Welcome to Day 1! Let’s start off on the right foot – and that means a healthy breakfast. There’s no way you can grab a muffin or eat a bowl of cereal and feel your best. So we’re gonna lose all those processed, sugar-laden morning options and go for something filling, nourishing and delicious.

Some of us will do great with a big bowl of oats. Or a banana.

But some of us (ahem…) might want more protein. Something a bit more filling.

You may have heard of tofu scrambles, and those are an ok way to go. (I’m not a huge fan of soy. If you are, please buy organic.) But the idea of a scramble that kind of feels like eggs? It’s fab.

Sweet tastes good. End of story. I’m reminded of this each day when Danny accepts his spinach or his beef but really lunges for his sweet potato. It’s a built-in craving.

Ok, so on that note I was in Target yesterday and decided we probably needed some cookies (oh geez, here we go Michelle). Since I wasn’t going to make it to Whole Foods, I figured I’d see what Target had. Like, a bag of good ol’ Fig Newtons must be fairly natural? Not too many weird ingredients, right?

Wrong! Fig Newtons are made with high fructose corn syrup, as are just about every other cookie on the shelf. Including the homemade-looking Archer brand I almost got fooled into buying. Only Kashi cookies were made with regular sugar.

(Which, of course, does not make them healthy by any stretch of the imagination. But I still bought them. I’m human.)

Anyway, the reason I’m talking about sugar and corn syrup is because we are all human, and we love our sweets. This is a recipe you will therefore love. All 3 of us did!

Cranberry Citrus Quinoa

For quinoa:
1 cup uncooked quinoa
1 cup orange juice
1 cup water
big pinch of salt

2 Tbl. olive oil
1/2 onion, minced
1 cup butternut squash, diced
1 pear, diced
5 oz. fresh cranberries, chopped (although I suppose you could use dried)
1 cup walnuts, chopped and toasted
1 handful fresh mint, chopped
1 handful fresh basil, chopped
1 lemon, juiced
Big pinch cayenne pepper
salt and pepper

First, rinse and drain quinoa. Then combine with OJ and water in a pot, bring to a boil and simmer until water is absorbed.

Meanwhile, heat oil in a big pan and add onion. Add a bit of salt and pepper. Cook until translucent. Add squash and pear. Mix and cover until they are soft (about 5 min). Mix in quinoa, then add herbs, lemon, and more salt and pepper.

*At this point, take out a portion for baby and set aside. At least, that’s what I did. Though in retrospect I think he’d have liked the cranberries if they were chopped smaller.*

For the adults, add cranberries, walnuts and cayenne. Mix well.

Serve over cooked or raw greens.

For the record, here are other things that Danny likes to try and eat:
Deodorant, christmas tree ornaments, my leg, the couch, his coat, my nose, the cat’s tail.

You’d think natural selection would have knocked out this dangerous need to eat everything by now! Or else natural selection is what gave mothers eyes in the back of our heads. Sometimes.
