Black Bean & Mango Tacos: Detox Recipe 7 of 21

Welcome to 21 Days of Detoxing! Whether you are one of our amazingly motivated participants or just interested in eating clean, whole, real food – boy do I have some recipes for you! From now ’til May 21st I’ll be featuring a delicious detox-friendly recipe each day. (And if you want to get in on the detox magic I have a Do It Yourself version available – right here.)

By day 7 of detoxing there’s usually mixed feelings in the group. Some folks are happy as a clam with their new regimen, others are still struggling out of their sugar/caffeine withdrawal – but I know from experience that another 7 days from now everyone is going to be in an even better place.

As I say over and over, our bodies are how they are after YEARS of eating and living a certain way. And change doesn’t happen overnight. But it DOES happen.

So hang in there, with whatever healthy choices you’re making in your life.

And now, for some inspirational tacos!

Black Bean & Mango Tacos
1-2 Tbl. olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/2 sweet onion – chopped
1 can black beans – drained & rinsed
1 jalapeno- chopped
1 red pepper – chopped
1 cup corn (frozen or fresh)
2 limes
3-4 Tbl. chili powder
1 Tbl. cumin
1 clove chopped garlic
For garnish: mango, tomatoes, cilantro, avocado

Heat 1-2 Tbl. olive oil in large pan. Add onion, salt and pepper. Once onions become translucent, add corn, peppers, & black beans. Add your chili powder, cumin, garlic and lime juice. Garnish as you like with chopped mango, cilantro, tomatoes, avocado.

Serve in an organic corn tortilla (Ezekial makes a soft sprouted corn tortilla, btw), over brown rice, quinoa or salad.
