Gobble ’em up Sweet Potato Brownies & Happy Birthday Danny

There hasn’t been a whole lot of baking going on around here lately. I burned a couple batches of Christmas cookies back in December and I think that was about it. Mostly I’ve found it hard to keep little fingers away from the kitchen cabinets and dishwasher. I really don’t need a hot oven in the mix!

Other places little fingers end up:
Pinched in drawers
In my mouth
Up my nose
In the toilet
Poking the hole in a raspberry
Pointing at every screw in every piece of furniture like it’s the most fascinating thing he’s ever seen

I love this kid. And today is his first birthday.

As I searched for a birthday cake recipe for my little man I found inspiration for sweet potato brownies, and used a naptime to make them last week. We ate the whole batch in about 2 days – husband loved them and so did the little guy.

Sweet Potato Brownies
Feel free to make your own puree from cooked sweet potatoes if you have time! I’m quite sure this recipe would also work well with butternut squash or pumpkin.
1 15oz. can sweet potato puree
1 1/4 cup whole wheat flour
1 cup Sucanat
1 tsp. baking powder
1/2 tsp. baking soda
2 Tbl. cocoa powder
2 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/2 stick butter, melted
2 eggs, beaten
1/2 cup chopped nuts

Preheat oven to 375F. Combine all ingredients. Generously grease a 9×13 baking pan and pour in mixture. Bake for 30 minutes.

So for today and I’m making these brownies again, along with a cake that uses zero processed sugar. Will have to post about that one later to let you all know how it goes!

I’m just bowled over by how much can change in a year. 365 days ago I posted this from bed while my infant baby slept 🙂
