Kick-Butt Kale Salad: Detox recipe 12 of 21

Early on, one of this year’s detox ladies told us that she had never had kale before. She’d never prepared it in any way, yet she jumped in and made kale chips! What a fearless woman!

If you’ve never had kale, eating it raw may seem absolutely insane. That’s what I used to think. The secret? Slicing it really fine. Letting it soak in the dressing for a few minutes helps too – you can even massage it with your hands. The acidity of the dressing breaks down the fibers of the veggies, almost like cooking it.

Same goes for cabbage.

Dillan’s Kick-Butt Kale Salad
Detoxers, try adding your flaxseed on top!
3 bunches kale, finely sliced
3-4 carrots, shredded
1 head red cabbage, finely sliced (labor intensive, but worth it)
Several avocados, diced
1 cup tamariā€roasted almonds, chopped
To taste: Gomasio*, roasted salted pumpkin seeds, sunflower seeds, a handful of raisins or currants
Salad dressing of choice

*Gomasio is found in Whole Foods and other health food stores. It is minced garlic, sesame seeds and sea salt in a shaker and it’s going to change your life.

Wash kale thoroughly, tear the leaves away from that hard spine and chop into bite size pieces. Add all remaining ingredients and dressing, toss and serve.
